Back in St. Olaf the dairy farms produce the best cream cheese. When we run out of Sverhoeven Crispies, we use the cream cheese to make homemade cheesecake. Most people in St. Olaf won't eat store bought cakes. We add some lime zest, a little rose absolute, vanilla, and a brown butter crust – it's just delicious! Like we say in St. Olaf, life without cheesecake is like St. Sigmund's Day without the headless boy.
